Kale and Radicchio Slaw with Braised Daikon

Ingredients

  • 1 large Daikon Radish

  • 1 head of red radicchio

  • 1 bunch of Kale

  • Scallions

  • Sesame Oil

  • Tamari Sauce

  • Rice Vinegar

  • Ground mustard

Preparation

Shred your radicchio and kale. Mix together sesame oil, Tamari sauce (soy sauce works), rice vinegar, and ground mustard. Toss in radicchio and kale. For a more complete slaw/salad add pine nuts, cooked rye berries, or walnuts and cranberries.


Slice off the thick outer layer of the daikon - this is often thicker than can be done with a peeler. Slice the daikon into 1/2 inch pieces. Heat a skillet on high heat. Once hot, add daikons and sear. While searing, brush with a sauce of Tamari (soy), sesame oil, honey, and hot sauce. Flip and brush the other side. Cook until tender.


Top with scallions.
