Chocolate Mousse

A healthy, high protein version!

Makes 4 small ramekins, size up as needed

  • 4 boiled eggs - chilled

  • 3 tbsp cocoa powder

  • 1/2 cup milk

  • 1/4 cup honey

  • 2 tsp vanilla extract

  1. Blend all ingredients in a blender or food processor. Once everything is combined, smell and taste. If it's super eggy, add another teaspoon of cocoa powder and blend again. Pour into individual ramekins and refrigerate.

That's it!

Notes:

  • I would highly recommend using the best quality cocoa powder and honey you can. Those are really what you are going to taste so the quality of the ingredients really comes through! I made it with a 2 year old (realistically 5 year old) can of store bought cocoa powder and again with a course ground pure cocoa from Mexico and the difference was wild!

The farm becomes a test of the unconventional, a continuous experiment, a journey of adaptation and living with change...I try to rely less and less on controlling nature. Instead I am learning to live with its chaos.
