Okra Fries

Recipe adapted from Chris Smith's "The Whole Okra"


This is the quickest, easiest, and BEST way to prepare Okra. I would suggest making 2 trays worth so that you can stand over the oven and eat one entire tray before serving any at the table.


Preheat oven to 425. Split your okra lengthwise into quarters, or halve if very small pods. Toss okra with olive oil, garam masala (or other curry seasoning), salt, and pepper. Lay in a single level on a sheet tray. Make sure they are not piled on top of one another or they will steam and not roast. Put into the oven on the middle rack. After 10 minutes, toss okra to make sure it is roasting evenly. Cook an additional 10-15 minutes. When done it will be brown and crispy, but not burnt.


Serve with a yogurt sauce of thick greek yogurt, lemon juice, lemon zest, olive oil, mint or any fresh herbs you have on hand.
