Pakistani "Old Clothes" Beef Curry

Traditionally called Nihari, slow cooked beef falls apart like old clothes. This recipe is adapted from The Indian Slow Cooker by Anupy Singla


Ingredients

  • 2 medium onions, sliced

  • 2 pounds stew beef, chunked

  • 1 inch piece ginger peeled

  • 2 heads of garlic (about 10 cloves)

  • 1 tsp ground ginger

  • 3 cardamom pods

  • 3 bay leaves

  • 1 cinnamon stick

  • 2 tbsp high quality garam masala

  • 2 tbsp ground fennel

  • 1 tbsp red chile powder

  • 1 tsp nutmeg

  • 1tsp turmeric powder

  • 1 tsp salt (and a pinch of black salt if you have it)

  • 1/2 cup tallow (or vegetable/canola oil)


  1. Slice onions and make a paste of the ginger and garlic. This can be done with a food processor, chopping and smearing on a cutting board, or using a small ribbed grater plate.

  2. Layer onions in the bottom of the slow cooker. Add beef on top

  3. Top with ginger garlic paste. Add all spices.

  4. No need to mix (really. I wanted to but I didn't, and it was totally not necessary)

  5. Drop spoonfuls of tallow or drizzle oil over everything.

  6. Cook on low (very very very low) for 9-10 hours.

  7. Make a naan to go with it and you won't be sorry. I made rice, but really the consistency is screaming for some hot naan.
